Pan-Fried Red Snapper
- Filet the fish and remove the skin.
- Mix a cup of flour, salt, fresh-ground pepper and whatever spices you like.
- Heat frypan to medium, melt butter or add small amount of oil.
- Whip an egg, dip the filets in the egg, then "dredge" in the flour until all lightly coated.
- Place in frypan, approximately 4 minutes per side, or until cooked (meat should lightly flake -- be careful not to overcook!!!).
- Serve with lemon quarters.
- Even better, use these as the base for some mean fish tacos...serve with limes, salsa, avocado, sour cream, and tortillas. YUM!
Red Snapper, more correctly called Yellow-Eye Rockfish, provide meaty white meat filets, excellent for pan frying.
