Halibut in Coconut Milk
- Cook in tinfoil or a casserole dish with lid.
- Place halibut steaks or filets, small baby potatoes (smaller the better, or they won't cool), bok choy, red peppers, snow peas, red onion.
- Add some chopped and skinned tomatos (or from can is fine, just not too much juice).
- Add some diced cilantro, save a few sprigs for presentation when done.
- Can also add some diced green onions and thin slices of ginger.
- Pour a can of coconut milk on top and juice from one lime.
- Add lemon pepper, salt, chili flakes or powder.
- Cook at 300 for 20 minutes. Poke potatoes with a fork to ensure they are soft.
- Serve on rice.
- Accept compliments on your fishing and cooking prowess.
Halibut is considered by many to be the best white fish for cooking — it takes on whatever flavour you are cooking with. Just be careful not to overcook it, because it is not too tasty when dried out.
