|  | Halibut in Coconut Milk 
          Cook in tinfoil or a casserole dish with lid.Place halibut steaks or filets, small baby potatoes (smaller the better, or they won't cool), bok choy, red peppers, snow peas, red onion.Add some chopped and skinned tomatos (or from can is fine, just not too much juice).Add some diced cilantro, save a few sprigs for presentation when done.Can also add some diced green onions and thin slices of ginger.Pour a can of coconut milk on top and juice from one lime.Add lemon pepper, salt, chili flakes or powder.Cook at 300 for 20 minutes. Poke potatoes with a fork to ensure they are soft.Serve on rice.Accept compliments on your fishing and cooking prowess. 
          
            |  Halibut is considered by many to be the best white fish for cooking — it takes on whatever flavour you are cooking with. Just be careful not to overcook it, because it is not too tasty when dried out.
